Bakery Product Development
From developing the sweet offerings as Head of Pastry at e5 Bakehouse to creating go-to festive specials like the ‘Caramelised white chocolate cranberry wreath’ at The Dusty Knuckle, I've enjoyed developing a wide range of recipes. This spanned from the ‘Pear and tahini pain suisse’ and ‘Blood orange and marmalade galettes’, to the ‘Miso caramel chocolate einkorn tarts’. Creating the plant-based ‘Ginger chocolate cookie’ proved such high demand, it encouraged the start of a new vegan bakery class just to show customers how to make their own.
Pastry Teaching & Workshops
A part of sharing recipes, for me, has always highlighted the importance of teaching others in the craft. I've had the opportunity to teach a selection of different pastry classes at e5 as well as at Lakefield Hospitality Centre, where I originally studied myself. Alongside this, training teams in kitchens I've worked in like e5, The Dusty Knuckle and Luminary Bakery, to then running lamination workshop days and consultations to give fellow bakers extra knowledge has become something I’m most passionate about.
HFSS Compliant Product Development
Working for the brand Urban Legend I've had the pleasure of creating seasonally changing specials, as well as best-selling staples like 'Cookies & cream' and 'Blueberry cheesecake' in their doughnuts range, as well as their first character based doughnut - 'Easter white choc chick'. Alongside these I created the 4 new flavours for the launch of a new line of dessert pots.
Dessert Product Development
By having had the chance to work alongside other chefs with a passion for seasonally sourcing ingredients, I’ve equally grown to love cooking with the seasons and utilising local ingredients wherever possible. Examples of this would be my ‘Butternut squash crème caramel with rye granola’, ‘Quince and roast cobnut Frangipane’, and ‘Rose, raspberry, and pink peppercorn entrement’.
Food Styling
Alongside my kitchen experience, I have had the chance to style for a number of photoshoots and marketing campaigns. Having my own wedding cake business opened my eyes to the importance of showcasing my creations, and food styling allows my attention to detail and perfectionism to thrive in a unique environment.
